Sabatini’s Italian Trattoria, the iconic specialty dining venue on Princess Cruises, has announced an exciting new partnership with the renowned Frescobaldi family, the celebrated winemakers from Tuscany, Italy. This collaboration brings an extraordinary new dining experience to the high seas, introducing a refreshed menu that highlights the essence of Italian cuisine, featuring freshly made pasta and exceptional wines.
The revamped Sabatini’s Italian Trattoria, now inspired by Frescobaldi, delivers a culinary journey that brings the heart of Tuscany onboard. The updated menu showcases dishes crafted using the finest ingredients, a tribute to the celebrated restaurant of Frescobaldi in Florence. These dishes celebrate the simplicity of fresh, high-quality ingredients paired with world-class Frescobaldi wines. As a highlight, each voyage will feature a Grand Tuscan Dinner, an exclusive evening celebrating the best of Italian hospitality. Guests will indulge in a luxurious multi-course dining experience, deeply rooted in Tuscany’s rich culinary traditions.

The Sabatini’s Italian Trattoria, Inspired by Frescobaldi menu offers six remarkable dishes, each embodying Tuscany’s time-honored flavors and traditions. The menu spans five courses – Zuppe e Insalata, Antipasti, Primi Piatti, Secondi Piatti, and Dolci – with dishes served daily. Signature items include:
Guazzetto di Cozze e Gamberi: A fragrant seafood stew of mussels and shrimp, simmered in a tomato and white wine broth with garlic, herbs, and a touch of chili, served with crusty bread.Burrata e Prosciutto Crudo Stagionato 18 Mesi: Creamy burrata paired with 18-month-aged prosciutto crudo, cherry tomatoes, arugula, and a drizzle of extra virgin olive oil.Fettuccine al Tartufo e Parmigiano: Velvety truffle-infused Parmigiano-Reggiano sauce topped with grated black truffle, a crispy parmesan tuile, and a drizzle of herbed oil.Tortello di Ricotta al Pomodoro e Basilico: Handmade tortello pasta filled with ricotta, served in a cherry tomato sauce with fresh basil, aged cheese, and extra virgin olive oil.Filetto di Branzino e Carciofi Fritti: Pan-seared sea bass fillet paired with crispy fried artichokes, drizzled with lemon-infused olive oil.Torta Caprese: Flourless almond cake with crema Pasticceria, caramelized hazelnuts, and chocolate brittle, served with limoncello mascarpone gelato and a drizzle of premium Frescobaldi olive oil.

This exclusive Grand Tuscan Dinner is available for a cover charge of $99 per person.
Additionally, Sabatini’s introduces a new selection of Frescobaldi wines, featuring iconic offerings such as Mormoreto, a celebrated wine from Castello di Nipozzano, and the rare Gorgona Bianco Toscana IGT. To complement these wines, Sabatini’s also unveils five new signature cocktails inspired by the character of each wine. Notable cocktails include:
