65g hazelnuts
30g pistachios
30g pine nuts
30g peanuts
30g raw Brazil nuts
30g raw sesame seeds
Β½ tsp fennel seeds
1.5g ground coriander
1.5g ground cumin
2.5g sea salt
π΅ Preparation:
1οΈβ£ In a small skillet, toast the hazelnuts, pistachios, pine nuts, peanuts, and Brazil nuts over medium heat for 2-3 minutes, stirring frequently until they release a fragrant aroma and begin to brown.
2οΈβ£ Add the sesame seeds and fennel seeds, toasting for another minute while stirring to prevent burning.
3οΈβ£ Transfer all the toasted nuts and seeds to a food processor. Add ground coriander, cumin, and salt.
4οΈβ£ Pulse until the mixture is coarse, leaving some larger pieces for texture. Taste and adjust seasoning, adding more salt, cumin, or coriander if desired.
