Moroccan Inspired Chicken with Deli Style Broccoli Salad – High protein Dinner Recipe (40gm per serving)
For Chicken –
• 1 Chicken Breast – about 120-150 gm
• 1” Cinnamon
• 1/2 Star anise
• 3-4 Cloves
• 1/2 tsp Cumin
• 4-5 All Spice (optional)
• 1/2 tsp Onion granules/ Onion powder
• 1tsp Black pepper whole
• 1 tsp Smoked paprika (optional)
• pinch of Saffron – required!
• 100 mL Buttermilk
For Deli style salad – Low calorie –
• Broccoli – 100gm
• Carrot – 1 small (about 50gm)
• Greek yoghurt – 1 tbsp – For high calorie, replace completely with mayonnaise
• Mayonnaise – 1 tbsp
• American mustard – 1 tbsp
• Pumpkin and Sunflower seeds – 1 tsp each
• Dried Cranberries – 1 tbsp (optional)
To add more protein, add a full hard boiled egg and mash together with yoghurt and mayo before mixing
Method:
For Moroccan Chicken-
– Dry roast all the spices except onion granules. Cool it down and blend them into powder
– Take the butter milk, add the spice blend, onion granules and saffron. Add smoked paprika for extra flavour.
– Flatten the chicken breast with a meat mallet or a rolling pin, and add it to the buttermilk.
– Marinate for at least 2-3 hours. Let the flavours soak in the chicken
– Once marinated, you can either grill the chicken in an oven at 180C for 30 mins, or an air fryer at 160C for 25 mins, or on a cast iron griddle pan (in video) until meat is tender.
For the salad-
– Blanch the Broccoli (Put it in boiling water for 1 minute, take it out and put in an ice bath)
– Grate the carrot
– Then mix everything together
Serve the salad at room temperature and the chicken hot off the pan. Add a bread if you’d like.
