Turkish LAHMACUN (yes, it’s not pizza. It’s lahmacun). Who decided to call this pizza anyway?? It’s the first time I made it and honesty… I ate (literally and figuratively) 😂 on a serious note though, I was really happy with the result. Obviously it won’t be AS good as the real deal, but I think I did a good job for a first time! What do you think I could have done better? All tips are welcome!
The hayfene “Fifth Element SpiceMix” was also a GAME changer for the filling. It added deeper umami-rich flavour. It’s part of their Element Spice Series (which is lowkey such a cool series). I’ve been loving how each blend brings its own flavours and I’ve been testing a bunch of recipes with them!
Ingredients for the filling
1 red bell pepper
1 green pepper
1 onion
1 bunch of parsley
2 tomatoes
1 tbsp tomato paste
1/2-1 tbsp pepper paste (if u have some)
1/2 tsp red pepper flakes
1 tsp salt
2-3 tsp (or more) Hayfene “Fifth Element SpiceMix”
1 tea glass (approx. 100 ml) vegetable oil
500 g ground beef (with a good fat content)
&for the dough:
5 cups flour
2 cups water
1 tsp salt
1 tsp sugar (optional)
this is one of the greatest dishes that exists in my opinion It’s called laajun and some people may know it as Turkish pizza but that’s kind of misleading cuz it’s not pizza at all Start by roughly chopping one onion one green pepper one red pepper and two tomatoes and add it to the food processor Pulse until it’s finely chopped If it’s too watery like mine give it a little strain before moving it to a bowl Next I’m adding some chopped fresh parsley and mixing that in For the spices I’m using Turkish chili flakes salt this five element spice mix which is a blend of sweet salty bitter sour and umami flavors Then some tomato paste and red pepper paste and of course olive oil Mix everything until it’s properly combined I actually added a bit more of the five element blend to really punch up the flavor Then add your minced meat and mix again Let the mixture rest in the fridge while you prep the dough In a bowl add water salt flour and mix Then transfer it onto your cutting board and knead until it’s a medium firm dough Shape it into a log and divide it into equal pieces Let those rest under a damp kitchen towel to prevent drying out Then preheat your pizza oven Roll out the dough And then I try to get it as thin as possible But as you can tell this is my first time making it But you know at least I tried Spread a thin layer of the meat mixture and into the oven it goes And since the oven is super hot it should only take a few minutes And that’s all there is to it To be honest I just kept going until I ran out of dough And then you can eat the ladun straight out of the oven or top it with whatever you like My go-to is red onions crispy lettuce and a generous spoon of thick yogurt rolled up like a wrap

I am from Türkiye and lahmacun is a perfect food i love soo much and you need to try "sarma" ist perfect
