Taittinger Comtes de Champagne 2007

    I’m finally getting around to posting some of my recent standout wines. Next one on the list. One of the classic champagnes, a must-try. Both times I had it, I was surprised by how youthful it seemed. Not much information on wood usage, but if my information is correct, it would be 5% new oak and used oak for the rest. This was more pronounced in the 2007 than the 2005 I had. Maybe the most Burgundian champagne I have had so far. Shout-out to my friend who found this bottle for €100 in the supermarche during his vacation.

    Butter, smokey, yellow apple, nutty, brioche and very nice acidity. Well integrated mousse and long finish

    Big fan of this move. Comtes 2007 is such a vibe right now. Also that glassware is doing half the work — did you let it breathe or just go full send?
