

I love baking and almost never bake proteins. My wife just had her last chemo this week so I stepped up and made her a fancy dinner on her first night where her nausea is manageable.
Strip steak sous vide.
Sautéed asparagus pieces.
Leftover rosemary mashed potatoes.
Onion and mushroom whiskey cream sauce.
Very proud of cooking meat that was edible!
Steak: 1 hr at 130 sous vide, with salt and garlic powder
Asparagus: cut into 1 – 1.5 in pieces. Quick sauce on stalks, add a touch of water. Cover for 5 min then add tops and cook
Potatoes: take leftover potatoes from family and microwave with cream
Sauce: sauté mushrooms and put aside. Sauté onions and garlic. Deglaze with dry vermouth. Add cream and reduce. Add mushrooms back in. Add seasonings to taste.

Oops forgot – add whiskey at end to taste. Pour a large glass on ice. Use what you need, drink the rest. Can leave out for sobriety.

If you want a pointer for next time you could work on developing the crust a little better (in my opinion). Did you sear on cast iron, or something different? My reccomendation would be to make sure the steak is as close to room temp before searing, and as dry as possible. Then you want to make sure the pan is RIPPING hot!
