🍅 Pomodori Ripieni al Forno – Stuffed Tomatoes (with Rice & Cheese)

📝 Ingredients:
• 4 large tomatoes
• Fresh basil leaves
• Fresh parsley leaves
• ½ cup raw rice
• Olive oil
• Salt
• Grated cheese (Parmesan or your choice)
• Mozzarella (grated or sliced)

🔪 Instructions:
1. Prepare the tomatoes:
Slice off the tops of the tomatoes and scoop out the pulp. Keep the pulp in a bowl.
2. Make the filling base:
Blend the tomato pulp with basil, parsley, a pinch of salt, and a little olive oil until smooth.
Add ½ cup of raw rice to the blended mixture and let it soak for 1 hour.
3. Stuff the tomatoes:
After 1 hour, lightly season the empty tomato shells with salt and olive oil.
Spoon the rice mixture halfway into each tomato, then add a layer of grated cheese and top with mozzarella.
4. Bake:
Place the stuffed tomatoes in an oven dish, drizzle with a little more olive oil, and bake at 200°C (electric oven) for 30 minutes, until the tomatoes are soft and the cheese is melted and golden.
