I have actually been obsessed recently with adding pumpkin puree to everything. I just turned a pumpkin into 2kg of pumpkin puree and let's just say I'm making my way through it

Ingredients:
– 120g pumpkin puree
– 40g protein powder
– 1 egg (haven’t tried egg whites)
– 1 (generous) tsp baking powder
– Sweetener drops (Haven't tried this with granulated sweetener but I mean definitely give it a try)
– (Optional) Almond milk if the batter is too thick, I added maybe 20ml

For me this was 250 cal, 37g protein

Method:
– Blend everything. If you mix it by hand it WILL be grainy and concrete-y lol. I use an immersion blender in a bowl and it works a treat
– Heat a pan on a low heat (for me on an electric stove it was 3???). Don't be the person who falls for the trap of thinking they can make pancakes faster, it just doesn't work
– Optional but drop a bit of oil in and spread it with a paper towel. The towel absorbs most of it and it makes a very thin, even coating which I personally don't bother to count (but that's up to you)
– Pour in the batter (I like giant ones but do whatever you like) and, importantly, PUT A LID ON IT!! The steam cooks them evenly and they come off of the pan so well:
– Flip when bubbles start popping, etc

I just topped mine with SF syrups and some cinnamon. Voilà!
