ΘΑ ΧΡΕΙΑΣΤΟΥΜΕ:
Για τις μελιτζάνες και τις πατάτες:

3-4 μελιτζάνες στενόμακρες η φλάσκες

4-5 πατάτες

Ελαιόλαδο για το τηγάνισμα ή το ψήσιμο

Αλάτι

Για τη σάλτσα κιμά:

1000 γρ. μοσχαρίσιος κιμάς

1 μεγάλο κρεμμύδι ψιλοκομμένο η 2 μέτρια

2 σκελίδες σκόρδο

400 γρ. ντομάτα κονκασέ ή τριμμένη

1 κ.σ. πελτές ντομάτας

1/2 φλ. λευκό ή κόκκινο κρασί (προαιρετικά)

ένα ξυλάκι κανέλα

1 φύλλο δάφνης

4-5 κόκκους μπαχάρι

Ελαιόλαδο, αλάτι, πιπέρι

Για τη μπεσαμέλ:

1,5 λίτρο γάλα

250 γρ. βούτυρο

250 γρ. αλεύρι

1-2 αυγά

100 γρ. τριμμένο τυρί (κεφαλοτύρι ή παρμεζάνα)

Μοσχοκάρυδο, αλάτι, πιπέρι

WE WILL NEED:
For the eggplants and potatoes:

3-4 eggplants, oblong or round

4-5 potatoes

Olive oil for frying or baking

Salt

For the minced meat sauce:

1000 g. minced beef

1 large onion, chopped or 2 medium ones

2 cloves of garlic

400 g. crushed or grated tomatoes

1 tbsp. tomato paste

1/2 cup. white or red wine (optional)

a cinnamon stick

1 bay leaf

4-5 allspice grains

Olive oil, salt, pepper

For the béchamel sauce:

1.5 liters of milk

250 g. butter

250 g. flour

1-2 eggs

100 gr. grated cheese (kefalotyri or parmesan)

Nutmeg, salt, pepper

The ingredients are listed in the video description. We start by slicing the eggplants, about 1 centimeter thick. Try to keep all the eggplant slices about the same thickness.
