Yeah. Back don’t have an enough meat to cook that long. Go for plate/short rib next time.

I’ve only done these once, but it was excellent. I seasoned them like a steak, but cooked them like kind of like pork ribs. I think I went about 275 for 2 or 2.5 hours and I felt like they were done at that point. They ate more like steak as I recall, but very good.
The plate ribs someone mentioned below is an entirely different cut of meat. Plate ribs are the ones that need to be cooked like a brisket. I think these back ribs do better with a little different cooking method. But at the end of the day the only thing that matters is if you like them or not.
