
Can’t do summer without pasta salad. Whole wheat rotini with chickpeas, Persian cucumbers, zucchini, tri-color peppers, Kalamata olives, cherry tomatoes, sun dried tomatoes, basil, banana peppers (or pepperoncini—I was out), mozzarella pearls and a little grated Parmesan or pecorino Romano (I was out of Parmesan too). Salt and pepper to taste, toss with your favorite dressing.
Italian Dressing: 1/2 cup extra-virgin olive oil, 1/4 cup red wine vinegar, 2 Tbsp. pepperoncini/banana pepper brine or fresh lemon juice, 3 Tbsp. minced shallots, 2 minced garlic cloves (or more to taste), 2 tsp. dried oregano and dried parsley, salt and pepper to taste
