Just wanted to share how easy and incredibly tasty sturgeon and sterlet are when grilled. These fish are seriously underrated in the U.S., but they’re packed with lean, firm, white meat that holds up beautifully on the grill.

Both beluga sturgeon and sterlet have a texture similar to veal or lobster, with zero small bones and a naturally buttery flavor. No marinating needed—just olive oil, salt, pepper, and a quick squeeze of lemon. Grills up in under 10 minutes!

    I wouldn’t say underrated as much as unavailable. Where I grew up in the U.S. (Great Lakes areas of Michigan) Lake sturgeon is a protected species because we fished them to the brink of extinction. Specialty fishing licenses are required, minimum size must be >50 inches, and can only be harvested a few days out of the year. Looks good though!

    I’m near Seattle. There’s a lot of great spots for fishing sturgeon, but I’ve never caught one in a lake

    Spring at the river nearby is so amazing to watch the sturgeon leap out of the water catching insect snacks. I’ve never eaten one, what’s the texture/flavor like?
