Rice, chicken broth, tomato sauce and paste. Spices galore ( garlic powder, cumin, onion powder …. This is the stuff I usually use to make mine.

Maybe cotija? The pre grated stuff is awful, but a block of cotija to grate at home is a treat. I find it on occasion in a little Mexican grocery in the States.
