I didn’t use a written recipe. Writing approximations here since it’s the rule.
Ground chuck – 2 lbs
Tomato sauce – 1 can
Diced tomatoes – 1 can
Chipotle peppers in adobo sauce
Kidney beans – 1 can
Yellow onion
Garlic
Jalapeño
Chili powder (to taste)
Salt
Pepper
—
1. Brown ground Chuck 2. Add salt, pepper, chili powder 3. Add onion, garlic, jalapeño, and chipotles in adobo 4. Simmer on low for 25 minutes up to an hour 5. Add beans and cook 10 more minutes 6. Remove from heat and serve

Freezes well. Serve over rice, pasta, toast, or baked potato.
I usually do vegetarian chili these days but all styles, it’s a great budget (and easy, make ahead) meal. Good idea!

I love chili as meal prep bc you can have it so many ways! On a baked potato/over French fries, over spaghetti noodles with some cheese and diced onion for chili spaghetti, mixed into or on top of macaroni and cheese for chili Mac, mixed into penne and topped with cheese for a casserole, on nachos. Chili is really a hard worker!
