    321g hi gluten flour
    209g water
    64g starter
    6.4g salt
    3/4 stick salted butter
    handful of fresh dill from the garden

    since it was my first time making croissant sourdough I very loosely followed some tips from this site [https://amybakesbread.com/sourdough-croissant-bread/](https://amybakesbread.com/sourdough-croissant-bread/) specifically keeping the dough temp down and doing an extra long bulk rise and proof. there was not much butter leakage in the pan after baking.

    I sliced them a bit early because I was so hungry, shown served with onion fried eggs

    I can smell this just from looking at the pictures. The dough speckled with the bright green dill before baking is so pretty!
