So, I've rendered out the guanciale even more, giving it a more charred, textured tinge. However, I didn't have any spaghetti (my local shops don't have good-quality enough options + the larger shops are closing earlier today), so I used fusilli bucati (if you're new to them – think of them like bucatini, but twisted in a shape of fusilli). I think they worked perfectly – the sauce covered every bit of them and got into cavities.

    Oh I’ve used that shape before for carbonara I have a fondness for squiggly noodles. Looks bomb. My personal favorite shape for carbonara is mezzi rigatoni

    Is that the pasta from Trader Joe’s? I’ve always wanted to use it for carbonara but I made a rookie scrambled egg mistake like 15 years ago and haven’t tried again.
