Moroccan Zaalouk (also known simply as “Zaalouk”) is a hot or cold appetizer made primarily with eggplant and tomatoes, and is one of the most popular side dishes in Moroccan cuisine. 📝 Ingredients:
• 2 medium-sized eggplants
• 2 ripe tomatoes
• 2 garlic cloves
• Olive oil
• 1 teaspoon paprika (sweet red pepper)
• 1/2 teaspoon cumin
• Salt to taste
• Black pepper to taste (optional)
• A pinch of harissa (optional, if you like it spicy)
• 1 to 2 tablespoons chopped coriander and parsley
• Juice of 1/2 lemon (optional)

🍳 Directions:

• Roast or fry: Roast the eggplant, tomatoes, sweet peppers, and garlic in the oven or fry them in oil until soft and golden. Remove the skins and mash them well.

• In a large skillet, heat the olive oil and add the remaining ingredients.

• Add the paprika, cumin, salt, pepper, and harissa (if using).

• Leave the mixture over medium heat until the tomato juices evaporate and it turns into a thick sauce.

• Stir well and let it cook over low heat, stirring occasionally, for 10-15 minutes.
5. Final Touches:
• Add the coriander and parsley, and stir well.
• Taste the mixture, and if desired, add lemon juice to enhance the flavor.

🌿 Serving:
• Serve the zaalouk warm or cold, and can be garnished with a little olive oil and parsley leaves.
• It is usually served with Moroccan bread or barley bread.
