When tomatoes are in season there is no better way to celebrate than by making the perfect bruschetta! Yes, it’s a very simple dish, but you need to use the best tomatoes, olive oil and bread you can find. You can play around with different varieties of tomatoes and I found these three to be the perfect mix for me. The secret here is to use tomatoes that are not too watery and that are packed full of flavour.

anyone can make a brusqueta but to make it delicious you need some really good tomatoes some really good bread and some good extra virgin olive oil i’m going to use three type of tomatoes samarano vizuvio and yellow doino let’s cut the vizuvio tomato this one has barely any water and is perfect for brusceta chop all of the tomatoes into small cubes add all the tomatoes into a bowl loads of fresh basil goes in just roughly cut it like this it doesn’t have to be super fine and a generous glo of extra virgin olive oil now just a touch of balsamic vinegar a good sprinkle of dry oregano and finish with a generous pinch of salt give it a good stir and let it set for at least half an hour now cut some thick slices of sourdough on a really hot griddle pan start toasting the bread and make sure you toast them on both sides while the bread is still really nice and warm rub it with the garlic all around the best way to serve this is to bring the tomatoes and the toasted bread to the table so everyone can enjoy the bread while still nice and crunchy and that’s pretty straightforward now put those tomatoes on top and add a little bit of that dressing all over and enjoy the taste of summer nothing to say bye
