Last time I did this kind of « what I eat in a dayΒ Β» on this subreddit, the comments were not very kind (basically I’m gonna die from this diet πŸ™ƒ).
But never mind, I had the most delicious day so I thought I wanted to share the recipes πŸ₯°

  • for breakfast: a chickpea omelette
    I whisk about 2/3 cup of chickpea flour with water, salt, pepper, spinach. Then cook it in a pan with a little bit of oil, and add vegan feta in the middle.

  • for lunch: I made the most delicious Mediterranean bowl πŸ₯Ή with a base of hummus, a Greek salad, tempeh and quinoa.

  • for appetizers: just corn fritters (1/4 cup of flour + 1/4 of water + 2/3 cup of corn, and salt, pepper, spinach and oregano) and radishes πŸ₯°
