




Had this tri tip curing in the fridge for the last 10 days and finally smoked it on the KJ today! First time ever making pastrami, so much better than I could have hoped for. Baked some sourdough, spread on some thousand island, added the pastrami, sauerkraut, and Swiss cheese to make some pastrami Rueben-esque sandwiches.

Interesting that you made pastrami with tri-trip as I have only made pastrami with brisket. Gonna try this as it definitely is cheaper than brisket. To save time, I have made pastrami out of corned beef from Sam’s club
Your sourdough looks excellent. Did you cook it on the KJ? My oven only gets to about 430f so considering trying using a Dutch oven on the KJ.
