Wendy’s style. Season all your beef, line a cookie sheet with paper, slap on the meat (I usually do 2 or 3lbs for a standard sheet, more often than not the 3lbs) measure out squares, cut with a pizza slicer, freeze for about 2 hours, finish cutting them. Now they each have their own paper so they’re less likely to stick together, nice and uniform, and perfectly hold your cheese 👌

  4. Something I noticed my grandparents do but always thought funny.

    Add a hole in the middle of the burger patty before freezing. Turns out perfect every time.

    Alton Brown did this on his show, but with chopped up onions in the mix. Also, Wendy’s. But I like it, OP. I’m a fan of the square patty.

    Please poke a dozen holes through each patty and make them 1/4 the size …

    So, make those patties about 1/3 of the size, add 4 holes, and you have White Castle patties!

    I’ve done this for our neighborhood block party a couple of times. Spread it out, use another sheet pan to press down for evenness. Easy to make nice thin patty sliders.

  13. I’m just discovered this method this week end and I am blown away with how awesome everything comes out! Freeze and bbq or throw the whole patty in the oven or grill on a black stone . Endless options but 1 easy and 2 adaptable!
