1. Farm crudités, whipped sesame, parsley oil
   Westcombe red gougere, fermented carrot
   Fried pig’s head, oyster leaf, leek top

2. Fermented potato brioche, garden herbs broth, wild garlic kefir cream

3. Trout, tokyo turnip, apple, buttermilk

4. Hand cut noodles, scallop roe xo, salted egg

5. Orkney scallop, nettle, egg yolk

6. Steam farm chicken, girolles, gross beans
   Koji thigh, kombu mustard
   Farm salad

Gooseberry sorbet, whipped ewes milk, spruce (didn’t get a picture of this)

1. Pistachio paris-brest, rocket, verjus

2. Brioche ice cream sandwich

I genuinely don’t think I can pick a standout, EVERYTHING was absolutely fabulous.
