this is the fastest way to make caramelized onions start by thinly slicing your onions they should be nice and thin but not too thin then add them to a pan over high heat with a splash of water and cover with a lid for 2 to 3 minutes to soften remove the lid and add a few knobs of butter along with a generous pinch of salt and a Sprinkle of sugar reduce the heat to medium high and stir every couple of minutes adding a small splash of water to deglaze the pan whenever you need and after about 15 minutes your caramelized onions should look like this

  2. he didn't actually make it just has the same color. Caramelized onions need to be cooked for at least 2 hours to have the correct amount of the Maillard reaction to happen
