this is the fastest way to make caramelized onions start by thinly slicing your onions they should be nice and thin but not too thin then add them to a pan over high heat with a splash of water and cover with a lid for 2 to 3 minutes to soften remove the lid and add a few knobs of butter along with a generous pinch of salt and a Sprinkle of sugar reduce the heat to medium high and stir every couple of minutes adding a small splash of water to deglaze the pan whenever you need and after about 15 minutes your caramelized onions should look like this

If you add a teaspoon of baking soda , it accelerates the caramelization of the onions and you don't have to add the sugar😊
Even easier way: add baking soda to the onions. That creates a chemical reaction and they get softer super fast.
