🇲🇦🥞Moroccan Pancakes Recipe (Baghrir)🥞🇲🇦

Ingredients: 3 1/8 cups lukewarm water, 1 tsbp active yeast, 1 tsp sugar, 1 tsp salt, 2 tsp baking powder, 3/4 cup all purpose flour, 1.5 cups semolina flour, avocado oil spray, half stick butter with equal parts honey (roughly 8 tbsp of butter and 8 tbsp of honey).

Equipment: Blendtec Blender, crepe pan, extra long crepe spatula and additional flat wooden spatula.

Instructions: Pour lukewarm water into Blendtec followed by active yeast. Mix on batter for about 10-15 seconds (if using a regular blender, blend until fully combined). Then add sugar, salt, and baking powder to blender. Blend again for about 10-15 seconds. Then add all purpose flour and semolina flour. Blend again until the batter is completely smooth with no lumps. Then, on a griddle or crepe pan, spray with avocado oil, raise the heat to medium or medium high, then measure out 1/2 cup of the batter and pour it into 6 inch diameter pancakes. Wait and observe as bubbles begin to form. Do not flip the pancake! Once the batter is bubbly and has a uniform color on top, check the bottom by carefully lifting a small section without flipping the pancake. Once the bottom is a golden brown color, carefully remove the pancake bubbly side up with both of your spatulas and move it onto a plate. Repeat this process until all the batter is made. Then make your honey butter mixture by melting 1/2 stick of butter and combing it with equal parts honey. Place into a small dish in the middle of a cake stand or platter. Surround the topping with the Moroccan pancakes in an aesthetically pleasing way, as presentation is very important! Then serve your guests and enjoy by ladling out the topping, rolling up the pancakes and breaking them in two, eating them by hand!

Today we’ll make easy, delicious
Moroccan pancakes. I’m Allison with Simple Fantastic Kitchen. And I’m so lucky to have my sister
Suzanne here with me today. She’s also a world traveler. Who knows how to make this delectable
recipe like a pro. She also knows how to pronounce the
pancake’s official international name… Moroccan Baghrir They’re honeycomb pancakes that are very traditional Moroccan breakfast, snack, and everyday food
that Moroccan families will eat. It’s also a really popular street food
and it’s delicious. So we are going to through the steps
on how to make Moroccan Baghrir. So we’re going to use a blender. You could just do this by hand
if you wanted to. It’s just easier,
because you want it really smooth. Right? It’s very similar to crepes, the consistency of the batter
is more like crepes because it’s thinner. than your normal pancake batter.
You don’t want it, lumpy. You want it fine. Very fine. Yeah. So we’re going to start with lukewarm
water, just a little over three cups 3 1/8 cups lukewarm water. And then one tablespoon of active yeast. And the active
yeast is what brings the bubbles out. Right? Which is unique. Exactly. That’s what makes it different than crepes
or pancakes is that it has yeast in it. And that gives it its unique form
when you’re eating it. Yeah. And then we’re just going to blend that
a little bit. Just to get it all mixed together
and get the yeast starting to activate. So I just put it on batter blend. Honestly, that’s probably enough. Yeah, absolutely. Absolutely. Just so that it’s all combined. So, next we’re going to do
one teaspoon of sugar. one teaspoon of salt two teaspoons of baking powder. Should we give that a whirl?
I think so. Mix that up a little bit so that everything is combined well before we add the
bulk of the dry ingredients. Okay. Next up we have
3/4 cup of all purpose flour. And then, Suzanne,
do you want to do the semolina flour? It’s 1 1/2 cups of semolina flour.. Exactly. And so semolina flour is durham flour. It’s the basis when you’re making pasta. It’s the type of flour that you use
you’re making pasta so it adds a little bit of a different consistency
or texture to the baghrir It’s a little bit, chewier
when you’re pulling it apart. It sort of just has a different texture. Yeah, it just makes it very distinct
from regular pancakes or crepes. Exactly. Just so you know, I’m using the
Blendtec Total Blender Classic today. Which is a high powered blender,
excellent for many tasks in the kitchen. I recently did a comprehensive review
of my 10 years of owning the Blendtec. I’ll put a link to that
in the description below I will also have links to the Blendtec and all the other products I’m using today
in the description as well in case you want to explore them. And let’s just give it a look.
And so I can see some bubbles already, but now we’re going to cover it again. And we’re going to let it sit
about 10 to 15 minutes just to let it sort of rise
a little bit with the yeast. And you could go longer than that
if you want. But that seems to be just fine, Ten minutes later. So it’s been ten minutes, and we are now ready to go,
so we can uncover. I think we just have to turn this on first
because you want to get it rocking and rolling a little bit.
Right, Suzanne? So yeah it needs to be hot
before you put the batter on So you’re induction cooktop
usually heats up really fast. It’s a nonstick, but you can spray it
with a little something. This is just avocado oil. similar as when you’re making pancakes. You might just want to put a pat of butter
down, or your choice of oils. And Suzanne’s going to pour first. You can see the bubbles coming in here. So I’m going to pour about this much. It’s about a half a cup. So want it to be about six inches
in diameter, roughly. You want them to be uniform. Because she was telling me that in Morocco
it’s all about presentation. And you can see it’s
starting to bubble up here. But the interesting thing about these pancakes
is you don’t flip them. You don’t flip them at all. You just let them bubble,
let them fully, fully cook, and then you just move them onto
the plate and cook the next one. Exactly. Cook on only one side so that you get the other side,
almost like honeycomb that will sponge up
the sauce that we’re going to make, which is in melted butter and honey,
which is so delicious. Yes, very traditional. And of course you can use
any kind of topping that you want. But we’re making it the traditional way
because I think it’s the most delicious. So it’s interesting because you can kind
of see where it’s getting fully cooked… is it’s changing color. So right here
where it’s sort of still creamy. That’s batter. So it’s not ready. And how long does each one
usually take to cook? I would say about three minutes. It depends how hot your pan is.
Yeah. Exactly. Two Minutes Later. You think it’s done? This is what it looks like underneath. Perfect. You can see that
It’s golden brown. It’s golden brown. So this one’s ready. I like to always use two Spatulas. Here we go. One is done. And then you can just stack them. That is too pretty for words. We have all of these Moroccan pancakes. Now all we have to do is plate them up
because presentation is everything. We are now plated up beautifully
in the traditional Moroccan style. And in the center we have this gorgeous
honey butter mixture. Just melted butter. in the microwave maybe just half a stick. Yeah. Half a stick of butter. And it’s equal parts honey and butter. So however much honey is that’s
how much butter you use. And then the traditional Moroccan way
of eating this, Suzanne is going to show us. Absolutely. So you’ll take one and ladle on your topping. And roll it up. And there is your look at baghrir Gorgeous. Look at that. All right I’m going to get mine going. And then we’re going to eat.
She’s going to spoon. Here we go. All right. Want a little more? Oh. There it comes. Okay. And then I’m going to roll it up. And then sort of pull it apart. And then you can see inside of it. That’s gorgeous. Now we’re going to taste. Right?
Here we go. Saha. Oh that’s so good. It doesn’t taste heavy. Because sometimes pancakes can be
very, very heavy. It’s light. It’s refreshing actually, don’t you think? Absolutely.
