– 1/2 avocado
– 2 cocktail cucumbers
– 1 cup spinach
– 2 small peppers
– 1.5 tbsp beetroot hummus

    Wish it was salmon instead of chicken thighs, adding a few nuts like walnut, Brazil nuts, blueberry and a spoon of Greek yoghurt to top it all off

    Love that looks so good! I love these types of bowls. When I used to travel a lot, I used to do something similar at Sweetgreen, Flower Child, etc. It’s such a filling and colorful bowl and you really nailed it.
