Ingredients:
• 2 medium onions, roughly chopped
• 1 large sweet pepper (any color), roughly chopped
• 1 cup cherry tomatoes
• 1 whole garlic bulb
• 3–4 tbsp olive oil (plus extra for drizzling)
• ½ tsp salt (adjust to taste)
• ½ tsp black pepper
• ½ tsp paprika
• 2 tbsp fresh cream or sour cream
• 1 tbsp lemon juice
• Fresh coriander or any fresh herb (for garnish)
• 1 tsp sesame seeds (optional, for garnish)
• Bread slices
• Butter (for toasting bread)

Instructions:
1. Roast the Veggies:
Preheat oven to 200°C (390°F). Add onions, sweet pepper, tomatoes, and whole garlic bulb to a tray. Drizzle with olive oil, season with salt, pepper, and paprika. Toss well. Roast for 25–30 minutes until soft and slightly charred.
2. Prep the Garlic:
Once roasted, cool slightly and squeeze garlic cloves out of their skins.
3. Blend:
Add all roasted veggies and garlic to a blender. Scrape in the tray juices and oils. Blend until smooth.
4. Finish:
Pour into a bowl. Top with cream, lemon juice, a drizzle of olive oil, and garnish with herbs and sesame seeds.
5. Toast & Serve:
Butter the bread and toast until golden. Serve warm with the dip and enjoy!
