My experimental tomato plants are doing the same. Curious to see the answers as they don’t look unhealthy as such.

Little bit of sunburn, but they’ll be okay. Give them some shade.

I’ve had this happen a little to mine this year too. It should be fine but the leaves may end up dying off eventually. The exact reason can vary but it is a stress response, the leaves curling up a bit is as well. The dark leaves seem to happen to mine after a combination of cold nights and a little too much water, and potentially too much fertilizer too. I also had some curling leaves after I transplanted my plants, likely because of too much water and a lower temp, but this can also happen from intense sunlight.
Your soil does look fairly wet. Have you had any cooler nights recently? If so, I wouldn’t be worried about it, especially if you’ve just transplanted them. Let them dry out a bit and settle in and they should be just fine besides maybe losing a leaf or two. Temps in the 50s aren’t great for peppers so you could give them some cover if it gets low, but that shouldn’t really cause problems at this point as long as they arent over watered and have settled in to their pots.
