Made a salsa using a couple tomatoes, carmalized onion, and fried dried chiles de árbol that I had used to infuse flavor in the oil to be used for the refried beans. The refried beans usually have chorizo in them but I used longaniza this time, but I prefer the chorizo.

Then gave these yellow peppers a little color and let them get soft and aromatic.

Then slapped together this torta de carne adobada, with the aforementioned refried bean, tomato, onion, lettuce, queso fresco (need to buy panela next time), and avocado.

Seasoning a molcajete for the first time is a mission lol

    Did you clean your molcajete before use ? Not many people know this but you are supposed to clean it by putting a tablespoon of rice and some water and grind it down so all the loose dirt from the rock can be cleaned.

    That looks great! I just bought myself a granite molcajete, that I had all the intention to use all the time for salsa toreada. I went through the steps to season it first and then at the moment of truth my hand got tired and I became impatient. I grabbed the half-mashed salsa from the molcajete and dumped it in the blender! I felt like such a fraud! 🤣
