Hi! I’m Shadi. I enjoy sharing videos that are visual slices of my life. Lately, I’ve been sharing some Persian cooking videos made in my small kitchen in Denver. This time, I am sharing a tidbit of how I made a non-Persian sauce that I absolutely love! It’s called Romesco Sauce. It’s from Spain. It can be put on meats but I used it on pasta recently. I learned how to make it in a local cooking class and it easily became my favorite sauce. Enjoy!
Here’s the recipe:
1 Red Pepper, roasted, then pealed and seeds removed
3-5 cloves of garlic
Toasted almonds
Toasted bread, torn up to pieces
Spanish olive oil
Red wine vinegar
Salt and Pepper
I am not the greatest at using the “right” amounts but recipes taste great with my instinctual portioning. I always add more of what I need in the end after a taste test! That instinct used for portioning like with seasoning and things can be considered Persian style for sure!
hi I’m Shotti and welcome to my YouTube channel today I’m going to teach you from my small kitchen in Denver how to make one of my favorite sauces souse romemesco sauce i learned how to make romemesco sauce in a a cooking class here in Denver and I was like why have I never had romemesco sauce in my life it’s delicious it’s from Spain and it’s become easily in my top three sauces i learned how to make other sauces when I worked at an Italian restaurant many many years ago i was making money as a hostess and I would go in the kitchen and I was curious so I learned how to make Marsala sauce lemon butter sauce and Alfredo sauce those are my other favorites and Romemesco has easily gone There’s Nico hi Nico has easily gone to the top of the list uh as my favorite and I made it for the first time today outside of the cooking class because I told myself if I’m going to take a cooking class I got to make the things that I learn in there outside of the cooking class so I’m here to share it with you today it is not part of my Iranian identity i like to make videos sharing my Iranian culture but not Iranian i haven’t learned how to make do an Iranian twist maybe add some turmeric to it i don’t know but I just got the main ingredients out of the food processor so first you’re going to need uh red pepper you’re gonna need almonds you’re gonna need garlic and you’re gonna need bread you toast the bread you roast the red pepper you just dice up the garlic and oh also tomato paste like a tablespoon of to tomato paste and the almonds I also toasted on the stove top so all of these things I mixed in a food processor i peeled the red pepper i made sure that the garlic was peeled and everything and so once I put it in the food processor it looks like this and I just uh cut up with my hands the bread it smells really good and I’m just going to put it in a Tupperware because I’m going to eat it on uh you can put it on pasta you can put it on fish traditionally it’s put on meats I’ve learned although I’m not an expert and then I’m going to mix it with some paprika and I’m going to put salt and pepper i’m going to use this red wine vinegar and I was told you could use cherry as well i’ve never used either one of those and then I was told to use olive oil especially from Spain and it says extra virgin olive oil 100% Spanish and then I’m just going to mix it all up and I’m just going to keep it in the fridge i was told that if you leave it overnight um especially like in the fridge for many hours or overnight especially it will it will those flavors will really mix and be really delicious so I’m excited to have Romemesco sauce at my house and this is a shorter video than some of my other videos i will um mix up these ingredients in a little time lapse and show you what the end result of Romemesco sauce looks like and it’s I can tell you it’s like it’s very earthy so far it’s it’s just so unique and uh the flavors are just earthy yummy so good so good thanks for tuning in to my channel stay tuned for the time lapse in the picture bye heat up here
