As usual, that looks like it would be really tasty… However, that’s a lot of scoring…probably not necessary for some of the pieces. Sometimes it is good to have different textures

Left top to bottom,
Benisake/sockeye, Katsuo/Bonito, Hamachi/Yellowtail, Saba/Mackerel, Ika/Squid
Right top to bottom,
Bincho/albacore, Sake/atlantic salmon, Chuu-toro/yellowfin belly, Akami/lean red tuna, Hotate/scallop.
Imma need to try them first before I can tell..
