Recipe # 1 Creole Mediterranean Chicken with Grilled Artichokes
Creole Mediterranean Chicken with Grilled Artichokes
Olive oil
2 chicken breasts, butterfly and pounded
Tony Chachere’s 30 Minute Chicken Marinade
Tony Chachere’s Seasoning
1/2 cup sun dried tomatoes, slivers in oil
1 small jar grilled artichokes
1/4 cup fresh basil leaves, torn
1/2 cup Parmesan cheese, shredded
Place chicken in marinade. Marinade for 30 minutes. Season chicken w seasoning. Grill orsauté in a skillet in hot olive oil. Don’t overcook!!! Add sun dried tomatoes, artichokes to pan and heat. Add chicken to pan Spoon tomatoes and artichokes on chicken. Cover with basil and parm cheese. Cover w a lid and let melt. Serve w skinny pasta or regular pasta.
Roasted Garlic and Rosemary Cornish Hens
This Cornish game hen recipe produces elegant results that taste delicious. Perfect for anytime!
4 Cornish hens
Tony Chachere’s Roasted Garlic or Butter Injectable Marinade
3 tablespoons olive oil, divided
Tony Chachere Bold Seasoning
1 lemon, quartered
8 sprigs fresh rosemary, divided
3 cloves garlic
⅓ cup sherry wine
Preheat the oven to 450 degrees. Inject Cornish hens with Marinade. Rub with olive oil and season with Tony Chachere’s Bold Seasoning.
Stuff 1 lemon quarter and 1 rosemary sprig into each cavity. Place Cornish hens in a heavy roasting pan and arrange garlic cloves around them.
Roast in the preheated oven for 25 minutes. Meanwhile, whisk wine, chicken broth, and remaining 2 tablespoons olive oil together in a small bowl.
Remove hens from the oven; reduce the oven temperature to 350 degrees F. Pour wine mixture over the hens and continue roasting, basting with pan juices every 10 minutes, until hens are golden brown and juices run clear, about 25 minutes. Thermometer in breast read 165 degrees.
Take hens out and reduce liquid until thicker.
