Don’t do this, it tends to become very rigged meat. Picanha is a piece of meat to cook as it is, you can cut it into 3 or 4 pieces and cook or make beefs out of it. I prefer to cook the whole thing. But never do it reversed picanha. There is only one thing that feels even better when is reversed and that is not picanha
