I asked for top sirloin with the fat cap on and this is what they gave me! What should I cook with this now?

    As some one who sells meat to Costco, they buy peeled culottes. No fat cap.

    Weird. Someone took the cap off these. Never had that happen. I’d probably make it into kebabs.

    A summertime favorite in my family:

    Season sirloin steak(s) with salt & pepper, grill to medium rare and cool.

    Make a marinade: 1 bottle sweet vermouth, 1 small can tomato paste, 5 garlic cloves (smashed), 2 bay leaves, 1 tsp each salt & pepper, heat to a simmer, whisk it all together and cool.

    Put the cooked steak(s) in the marinade in the fridge overnight.

    The next day, discard the marinade and slice the steak into thin strips. Arrange on a platter with thin slices of cucumber. Sprinkle with chopped parsley and dress with a light vinaigrette dressing. Serve at room temp.

    Grandma made that every July 4th.

    Those are whole picanha just without the fat. Cook it like a steak.

    Cut steaks. That is not sirloin with fat cap. To be fair, sirloin doesn’t come usually with a huge fat cap, and the fascia that runs through it, all the way, is usually left in, as it runs right through middle. I used to cut meat at steak houses. Sirloin was among my favorites to cut, because of the challenge of getting the tendon like fascia, which is tough and chewy, almost inedible when cooked, all the way out of the meat.

  6. at 9.99 you should get a refund. that’s picanha/top sirloin cap but some dumbass trimmed off the fat cap.

    i little trimming and take that silver skin off and you can make some good steaks and some kebabs with the smaller pieces.

    Chuck wagon pepper steak, shredded taco meat, Japanese curry, goulash, beef stew ect.

    It’s from Costco. Take it back. Otherwise I would make Italian Beef sandwiches

    If you have sous vide gear, that’s the way to roll. Cut with the grain into steaks, season with Salt, Pepper, Garlic Powder, sous vide for 2 hours 132.5°. Sear in cast iron, a really hot grill, or use any premium searing gear you have. When serving, cut against the grain, and enjoy.

    Also, since you lost the fat cap, consider making a compound butter. I’d keep it simple, with a classic garlic herb.

    People need to stop treating Costco and Sam’s Club like some kind of specialty meat market. It’s a bunch of dumb kids usually handing out bags of crudely cut meat as cheaply as possible.

    My recommendation would be not to overthink it if you’re struggling to make good food keep practicing.
