Yeah…you don’t need to go that high. 550 Will burn out anything that’s in there and is way easier on your egg and table as you see lol. I burned a table down after a pizza cook several years ago. Went to a metal table after that one.

Clean burns are pointless. I can clean almost the entire smoker at 400°F. Anything hotter is just burning the seal and unnecessary. Truly.

I see these beautiful tables, and I think to myself, man, what an amazing way to hold the Egg, and really show it off. And then I remember when I cook pizzas at 800 degrees, I can barely stand next to the thing, let alone think about cradling it in a cutout made of wood….
This has strengthened my position.
