Considering making Blue Cheese American cheese for burgers 👀https://www.seriouseats.com/melty-american-style-cheddar-cheese-slices-for-burgers-and-grilled-cheese-recipeby BrightenDifference 2 Comments LAskeptic 3 months ago I think using sodium citrate is much easier. It makes a great melting cheese, but I’ve never used Kenji’s recipe so I can’t compare.Bring to simmer 115g water or beer and 14g sodium citrate. Whisk in 380g of whatever cheeses you want. Pour onto a prepared sheet pan. Chill. Not sure where the recipe is from. Maybe Modernist Cuisine or maybe even Serious Eats.
