But I will say, even the well done parts were so damn good and juicy. Lesson learned hopefully

    Fattier cuts can get away with being overcooked. Might be tougher, but more fat renders out and gives a different sorta taste.

    It is really OK.

    Ribeyes and especially bone-in tomahawks are fine if they are a bit overcooked because there is enough fat to prevent it from drying out. In fact, some of these cuts are actually a bit better closer to medium because the fat has a chance to fully render.

    This is probably going to sound moronic and sacrilegious but I’m beginning to feel like a lot of people on here have mastered their steak cook to a point that you can be off on color and it’s going to be tremendous no matter what.

    Great sear and a perfect medium-well cook on it. You can still see some pink in the center.

    Collect the juices and you’re good. Don’t be upset.

  18. I overcooked one once and slow cooked all that I couldn’t eat (wouldn’t of finish anyway)and put it in a stew
