
I’m not the biggest fan of most eggplant dishes because I find that it can get slimy but I remember really enjoying caponata last time I had it, which was a longer time ago than I care to admit. Since it’s been so long, I used two recipes (links below) as a reference, took a little from one, a smidge from another and added my own touches and the result was amazing! So incredibly flavorful, hot or cold. I could easily just snack on it but for dinner I had it with some chickpea pasta (some of these alternative pastas as pretty good), basil from the garden and a teensy bit of Parmesan. Definitely a keeper.
