    3rd go around at homemade ramen tonight outside of the noodles, those were store bought. Used up the last of u/ramen_lord’s chintan broth I made and froze a while ago. Did a shoyu tare with a pork lard aroma oil and topped it up with some leftover chashu pork, stir fried cabbage and onions, scallions, and my first attempt at ajitama. I’m not a huge egg fan, so I wasn’t sure how I’d like them, but the salinity and seasoning of the tare and broth mixed with the tender egg really was something else.

    They could have been marinated for longer admittedly because I followed Kenji Lopez-Alt’s recipe with the last three eggs I had and they were an utter undercooked disaster. Had to go out and buy more eggs and get them cooked and marinating as soon as possible for them to be ready for a late dinner.
