Pulled the skin back and seasoned the meat with Kosmos Texas Beef. Folded the skin back and shook Holy Voodoo on the top and bottom. Got the PK360 to 225. Added 3 chunks of apple and 1 chunk of hickory. Ran it for 2 and 1/2 hours.

I like the flavor contrast of the bright lemon of the Texas Beef to the heat of the Voodoo.

  2. One of my favorite meals as a kid was a grilled chicken thigh dish with grilled/smoked peaches. Been trying to find the “right” version of it for years.

    I like chicken thighs, but i still have PTSD from years of scraping the fat off the skin of thousands of thighs for bbq comps. They look good, though.

    They are really forgiving to grill too. You can really overcook them and they stay juicy and tender.

    I’m on gas, I usually do thighs on higher heat and it’s my favorite thing to cook. Usually either a fajita or Peruvian style marinade

    Oh them look good, super tasty. I love smoking dark meat because it can handle temperatures for longer which means more smoke. Straight perfection!

    Cooking chicken thighs at home and they are always fantastic. Get them from a restaurant and it’s usually poorly cooked or terrible. No clue why that is.
