These are the hottest buffalo chicken sliders you’ll make 🥵 sandwiched between fluffy rolls is a layer of mayo, spring onion, a thick layer of buffalo chik’n, and lots of gooey cheese. I’m using jackfruit here to sub out the chicken and cook it in a homemade buffalo sauce (that is HOT 🔥). Brushed with butter right out the oven, these are BOMB 💣

Buffalo sauce —
▢ 1/2 cup dairy free butter
▢ 2/3 cup hot pepper sauce
▢ 1/2 Tbsp white vinegar
▢ 1/4 tsp cayenne
▢ 1/4 tsp garlic powder
▢ Salt and pepper, to taste
Chik’n —
▢ 1 can (14 oz) jackfruit, drained
▢ 1/2 tsp smoked paprika
▢ 1/2 tsp old bay seasoning
▢ 2 tsp garlic + onion powder
▢ 1/2 tsp black pepper + salt
Other —
▢ Plant based mayo
▢ Spring onion, chopped
▢ Plant based cheese slices
▢ Melted dairy free butter, to brush on
Instructions:
1. Preheat oven to 350F. Using a serrated knife, slice the buns in half horizontally and place on a baking tray.
2. In a saucepan, add all buffalo sauce ingredients. Cook on a medium-high heat, stirring, and simmer until it boils. Remove from heat and set aside until needed.
3. In a large pan, add 1 Tbsp of oil then jackfruit. Cook, using a spoon to break up the jackfruit so it resembles chicken strips. Once lightly browned, add buffalo sauce and combine.
4. On bottom half of buns, smear on a desired layer of mayo followed by cheese, spring onion, then the buffalo chik’n. Place top buns on top and bake for 10 minutes or until cheese is melted.
5. While it bakes, combine melted butter with a handful of chopped spring onion. When you remove the sliders, brush over buns.
