today I’m taking the Greek classic laano dolmades which basically translates to stuffed cabbage rolls and I’m going to take them and turn them into a soup Okay we’re going to begin by making the meatballs So once the onion is finally chopped half of it is going to go in the pot with a little bit of olive oil and this is going to cook over very low heat until the meatballs are ready Now in a big bowl I have ground beef I’ll add the other half of the onion to the bowls and then I have a handful of fresh parsley here I’ll drizzle some olive oil over this too A teaspoon of dried dill one teaspoon of salt some freshly cracked black pepper and half a teaspoon of dried mint Then we’ll add 1/3 of a cup of our bore rice to this that’s uncooked I’m just going to mix this all together and then roll it up into little meatballs So now we’ll go back to the pot I have three garlic cloves that are finely grated four quarts of chicken stock or chicken broth We’re going to bring this mixture to a boil and then very carefully drop the meatballs into the stock Cover the pot and reduce the heat to a medium And after 20 minutes the cabbage is going to go in I also like to add a little bit of orzo pasta to this Also season the cabbage with some salt and pepper Now we’re going to make the avo sauce So in my picture over here I have four egg yolks I’ll add about half a cup of lemon juice to it 1 to 2 tablespoons of cornstarch Then take some of that hot broth from the soup and temper the egg mixture Whisk it all up and carefully add it into the pot And this is going to warm through on low heat for about five minutes or so
