Lovely Gorgina and her family welcomed him, while the electricity crashed in the storm, and together they boiled, stirred and shaped the milk into a delicious cheese!

[Music] last night I had the privilege and the pleasure to be in Agas Ainasios high in the mountains here in Evia in a crazy storm making this cheese with a beautiful family it was the most incredible experience so the cheese is made of sheep’s milk and goats milk and a little bit of salt at the end of the cheese process and then they put it in here overnight only one night so this cheese is super fresh as you can see like that and here I’m going to cut it in half to show you the texture inside it’s quite dry and crumbly it’s perfect for making fried saganaki cheese which I’m going to make for you guys wow so fresh wow almost cry everything makes me want to cry here try some pretty good for my opinion a little bit more soft but it’s amazing we We call this cheese cheese cheese catastropha it’s unbelievable i’m having such a great time
