These gorgeous beets and giant asparagus came in a gift basket. What a great surprise! I’d never seen asparagus this thick before… and it turns out they were the best I’ve ever tasted. Just roasted at 400°F for about 15 minutes. I served the roasted beets with avocado, simply dressed with white balsamic, olive oil, salt, and pepper. Perfect sides for a cozy pasta and mushroom dinner.
