I am SO DAMN PROUD of this dish! No wonder so many people post their carbonara dinners on here. It’s simple and so delicious! All I had was bacon but I will be on the lookout for guanciale the next time I do this! If I can’t find that, I’ll settle for pancetta.
I am also getting a pasta roller for my birthday and plan on making my own pasta in the future for this dish! 😋

During the holiday season markets have plenty of Jowl on sale in the ham, smoke hams, bacon section. Buy several pieces, break down, and store in freezer bags to muse throughout the year.
