[Music] [Music] hi friends and welcome back to the rustic cottage cuisina i’m Tatiana and today we’re making a cozy comforting twist on a Greek classic avo but without eggs this version is creamy tangy and still full of flavor all while being glutenree egg free soyf free and made with love here’s what you’ll need one whole organic chicken 2 cups of potatoes 1 cup of celery one cup of lemon juice six cups of water 1 and 1/2 cups of basmati rice 1 tspoon of better than bullion 1 teaspoon of black pepper 1 teaspoon of celery salt 1 teaspoon of Greek seasoning and 1 tbsp of dill we’re going to start by adding the water to the pot and we’re going to fill the pot with enough water to just cover the chicken [Music] next we’re going to add our better than bullion [Music] [Music] and mix that in very well [Music] [Music] go ahead and add your pepper and your Greek seasonings [Music] celery salt [Music] and dill [Music] [Music] next you’re going to add your celery give that all a quick mix and turn the heat up to a boil and once it’s boiling turn it down to a simmer [Music] [Music] once the pot is boiling we will go ahead and chop up our potatoes [Music] [Music] [Music] now the next step is to juice the lemons [Music] then fluff up your rice and get it ready for when the time comes to add it into the soup [Music] this is about the halfway mark the chicken is still whole and not breaking apart easily but once it does that’s when you know that your chicken is ready for the next step [Music] [Music] now that the chicken has been boiling for about 2 to 2 and 1/2 hours it’s time for the next step [Music] next we’re going to add the potatoes and get them soft [Music] once the chicken is finished you’re going to fish it out and separate the meat from the bones [Music] [Music] [Music] to test your potatoes and to make sure that they are the perfect consistency you want to squeeze them with your tongs or spatula and if they break apart easily then we’re ready for the next step [Music] next go ahead and add your lemon juice but reserve just a little bit for after when you plate your dish you can add a little more now we will use our emulsifier and we’ll blend the soup until smooth then stir it and let it simmer for that classic thick creamy texture go ahead and add back your chicken and cook until all heated through [Music] next you’re going to want to add your rice and stir until thick [Music] [Music] and here it is our eggfree avoino style soup creamy lemony comforting and completely allergyfriendly [Music] [Music] [Music] okay so I’ll be trying it let’s see tell me what you think is it good yes delicious mhm guess what no eggs for real yep no eggs is it a winner winner chicken dinner yay all right if you loved this cozy Greek soup don’t forget to like subscribe and ring the bell for more allergyfriendly recipes from the rustic cottage cuisina thank you for being here today and as always Kiorexi yum everyone this is like the best soup ever made
