Small potato aside, this dish has led me to discovering a new lunch idea that I absolutely adore!
I make as directed (I use the entire packet of chimichurri and no oil when I roast, since it has oil in it), let cool, and then split in half. When time to eat the next day, take your portion (I do not reheat – this is a cold salad for me) and mix in a can of albacore tuna, salt and pepper, and a big squeeze of fresh lemon. Sometimes I add pepperocinis or capers as well.
It makes a nice, filling, high protein meal. I love it!
