    What is the solution if this is so bad? When making a full steak I don’t trim but when making carne guisada too much fat will ruin it

  2. Why wouldn’t they cook it with the fat on at least and then cut it. Although that’s terrible as well, it’s less terrible.

    They should have trimmed it after cooking but if you’re watching your macros because you have a goal, then it makes sense to trim the fat

    My roommate and I will buy and split a big pack of NY strips.

    He will very methodically trim every single gram of the beautiful fat cap off of every single one of his before he vacuum seals and freezes them.

    Because I’m apparently living with a damn monster.

    Consider advising them to purchase a leaner cut next time. By wasting 50% of the purchase they are in essence doubling the cost of the meat. Those $15/# steaks are now $30/#. Also, leaving these in the butcher’s case will allow someone else to enjoy them with more respect to the animal.

    I work in a steakhouse: you’d be aghast how many people order ribeyes and throw away the trim and lip. Like they don’t like the fatty parts of a ribeye. Very clear these 35-70 year olds don’t understand the whole point of a ribeye is the fat.

    As kids, people get a big mouthful of fat and get grossed out. They don’t realize that the fat, in the correct proportions, is what gives steak flavor. That’s why prime grade is marbled and expensive. Plate on the right does not have proper fat proportions clearly.

    I recently got a really fatty sirloin. I cut that extra fat off the edge and rendered it down to cook the steak in. Always save your fat folks.
