2 free-range eggs

4–5 cherry tomatoes, thinly sliced into rounds

1 tbsp olive oil (or butter for richness)

Salt & freshly cracked black pepper to taste
1–2 fresh basil leaves, chiffonade-cut (thin ribbons)

1 slice of aged cheddar or Gruyère cheese
Microgreens or edible flowers (optional for garnish)

Method:

Sauté Tomato Base:

Heat the olive oil over medium-low in a non-stick or carbon-steel pan.

Arrange the thin tomato slices flat on the pan in a spiral pattern (like plating in reverse).

Let them caramelize for 2–3 minutes.

Using a microplane or fine grater, grate fresh garlic over the tomatoes.

Lightly season with salt and black pepper.

Turn off heat while preparing eggs.

Egg Mixture:
In a bowl, beat the eggs gently until just combined (don’t overbeat).

Fold in the chopped onion and green chili. Add a pinch of salt.

Cook the Omelette:
Bring the tomato pan back to low heat.

Pour the egg mixture over the tomato base.
Use a spatula to gently stir once, then let it set undisturbed.

Once the base is cooked but the top is still a bit runny, sprinkle the chiffonade basil across.

Flip & Fill:
Carefully flip the omelette or fold it in half (French-style technique).

Add the cheese slice in the center and let it melt gently as the residual heat finishes the inside.

Flip again if needed to crisp both sides briefly without overcooking the center.

Plating:
Slice the omelette in half on a diagonal.
Plate with finesse: one half leaning against the other.

Garnish with a few microgreens or a basil sprig and edible flowers if available.
