Well…was a quick decision to do this so the rub didn't have much time to sit. But…awesome anyway.
Hickory pellets.
Applewood rub.
Injected apple juice into the loin.
250⁰ until 145⁰ internal.
Wrap in foil and rested for 10 min.
Sluce and enjoy. I'd totally do this again.
