Turkish Pasta Recipe

Serves 4

320g pasta bows
(Around 80g per person)

Yoghurt sauce:
400g Greek Yoghurt or plain yoghurt
1 grated garlic clove
Juice half lemon
1 tsp dried mint
Salt and pepper to taste

Meat:
400g minced beef
1/2 onion diced small
1 tsp paprika
1 tsp curry powder
4 tbsp tomato paste
Salt and pepper to taste

Butter sauce:
25g ghee or butter
25g olive oil
1 tsp chili flakes
1 tsp paprika
Handful pine nuts

Garnish with cherry tomatoes and fresh mint or parsley.

1) bring pasta water to a rapid boil add some salt and the pasta, cook until al dente. After draining the pasta rinse with cold water to avoid sticking. when ready to serve pour hot water from the kettle over the pasta and drain.

2) to a bowl add all of the yoghurt sauce ingredients, mix welland set aside at room temperature.

3) brown the minced beef add the onion and spices. Cool until the onion is soft.

4) add the tomato paste and cook fir another few minutes. add a little water if it’s drying up.

5) in a separate pan add all of the butter sauce ingredients and cook over high for a few minutes.

6) assemble the dish staring with the pasta, the yoghurt sauce, meat and then top with the butter and garnish with tomato’s and fresh parsley.

Note: if you want the yoghurt to be warm gently heat up in microwave or pan.
